Tevrat der ki, büyük tufan yeryüzünün tamamını sular altında bıraktığında geride yalnızca her varlıktan bir çifti taşıyan gemisiyle Nuh Peygamber kalır. Nuh'un gemisi, aylarca sular üzerinde sürüklendikten sonra yüksek bir dağın tepesinde karaya oturur. Tufan biraz durulur gibi olunca Nuh gemisinin güvertesinden beyaz bir güvercin uçurur. Güvercin, ağzında bir zeytin dalı ile geldiğinde Nuh Peygamber tufanın bittiğini ve suların çekildiğini anlar. O günden beri zeytin dalı hayata dönüşün, umudun, iyiliğin ve barışın sembolü olmuştur, zeytin ağacı da ölümsüzlüğün...

Geçmişi günümüzden yedi bin yıl öncesine dayanan zeytin ağacı, bu ağacın meyvesi olan zeytin ve zeytinin özü sayılan zeytinyağı tarihin her döneminde kutsal sayılmış ve birçok efsanenin de kaynağı olmuştur.

Ve rivayet odur ki, en nefis zeytinyağı binlerce yıldır Kazdağından gelen binbir baharatın kokusunun Ege’nin meltemiyle karıştığı bu eşsiz coğrafyada üretilir.

İyi bir zeytinyağı için zeytinler henüz bütünüyle olgunlaşmadan toplanıp, meyvemsi tadını yitirmemesi için bekletilmeden fabrikaya ulaştırılır. Eskiler bu konunun önemini “ağaçtan taşa" diye ifade etmişlerdir.

Taş, eski zamanlardan beri zeytinlerin hamur haline getirildiği değirmenlerdir ve Müzemizde bu taşlar üretimin çağlar boyunca nasıl yapıldığına dair bir fikir versin diye halen çalışır vaziyette korunmaktadır. Ancak, her ne kadar taşın büyüsü bizi halen cezbetse de modern çağın verim-hijyen gereklerine göre üretimimizi modern tazda soğuk sıkım olarak güncellemiş bulunuyoruz.

Noah’s ship, after drifting on the waters for months, came to rest on the top of a high mountain. When the flood seemed to calm down a little, Noah released a white dove from the deck of his ship. When the dove arrived with an olive branch in its beak, Noah understood that the flood was over and the waters had receded. Since that day, the olive branch has been the symbol of return to life, hope, goodness and peace, and the olive tree has been the symbol of immortality...

The olive tree, whose history dates back seven thousand years, the olive, which is the fruit of this tree, and the olive oil, which is considered the essence of the olive, have been considered sacred throughout history and have been the source of many legends.

And it is said that the most exquisite olive oil has been produced in this unique geography where the scent of a thousand and one spices coming from Kaz Mountain mixes with the breeze of the Aegean for thousands of years.

For a good olive oil, olives are collected before they are fully ripe and are delivered to the factory without waiting so that they do not lose their fruity taste. The old people expressed the importance of this issue as “from tree to stone”.

Stones are the mills in which olives have been turned into pulp since ancient times and these stones are still preserved in working order in our Museum to give an idea of how production has been done throughout the ages. However, although the magic of stone still attracts us, we have updated our production to modern cold pressing according to the efficiency and hygiene requirements of the modern age.
